I tried making a Victoria Sponge for my British roommate last year and had trouble with the cream. He and his friends back home insisted it wasn’t whipped cream that was used. With no concrete reference, I made a sort of very thick buttercream from their descriptions. It was a disaster. Does whipped cream translate, or will my friend wind up disappointed again?
