summer eats
Avocado on toast with olive oil and sea salt; heirloom tomatoes and fresh mozzarella on toast.
Fried eggs on toast; sauteed rainbow chard; strawberries.
Raw oats with Greek yoghurt, sunflower seeds, almonds, peaches and strawberries.
As is always the way in the summertime, I’m cooking less. More time spent outside in the hot sun and less time inside my sweltering kitchen.
I thought it might be fun to show you a snap shot of how I eat in these hot weeks when I’m sharing fewer recipes with you. Imagine a healthy amount of peanut butter on toast and smoothies thrown into the mix and you have a pretty accurate portrayal here.

these are the perfect summer eats, thanks for sharing!
we eat basically what can be cooked without using the oven. i threw together one concoction this week, that sounds kinda gross but was good, even my 7 year old scarfed it! cut corn off the cob and cook in pan for couple min, then pop it into a bowl, throw in chopped tomato, avocado and little bit of lime juice. was super tasty and easy and fast! i also made another side of beet and carrot slaw made with greek yogurt, dill and lemon. i think fresh is the key to the summer eh?

What a good idea to share all of our easy summer ideas!
I’m eating a lot of toast with loganberry jelly right now, since I just made the jelly! Also, pan-fried sockeye salmon on lentils, European wieners with grainy mustard and potato salad, and a lot of tomato, basil and mozza salads . . .
Tonight, we’ll have radish tarte fine from Chocolate and Zucchini. I do have to bake it for a few minutes, but it’s served cold, so it feels refreshing (and the kitchen has cooled down by then!).

Yum! Looks a lot like what I’ve been eating. Now that tomatoes are showing up at the market, I can’t get enough. Today for lunch: toast + goat cheese + tomato. Incredibly simple, but so delicious (my favorite combo in the kitchen all year, but especially in the summer).

This morning I discovered the greatness of a toasted english muffin topped with smashed avocado, sliced cherry tomatoes, salt & pepper. yum.

I thought those heirloom tomatoes in the 1st pic were actually apricots at first, and now my head is dancing with visions of apricot-goat cheese toast. Ha!
I am eating veggie burgers, pastas with lots of sauteed veg, and sandwiches stuffed with every good thing. :)
